Ingredients

  • 1 tablespoon olive sunflower oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon mild curry paste (such as korma)
  • 1 teaspoon ground turmeric
  • 1 red capsicum, finely chopped
  • 10-12 fresh curry leaves*
  • 1 1/2 cups (300g) Basmati rice
  • 3 cups (750ml) Massel vegetable liquid stock
  • 1 tablespoon lemon juice
  • 425g can tuna in chilli oil, drained
  • 60g snow peas, thinly sliced
  • Mango chutney, to serve (optional)
  • Indian pickle, to serve (optional)

Method

  • Step 1 Heat the oil in a large frypan over medium-low heat.
  • Step 2 Cook onion and garlic for 2-3 minutes until soft. Add curry paste and turmeric, and cook for 1 minute or until fragrant. Add capsicum, curry leaves and basmati rice, and stir to combine. Add the stock and lemon juice, then bring to a simmer.
  • Step 3 Cover, reduce heat to low and cook for 10 minutes or until liquid is absorbed. Add tuna and snow peas, and stir gently to combine.
  • Step 4 Serve tuna pilau with chutney and pickles, if desired.
