Ingredients

  • 2 cups Basmati rice, rinsed
  • 150g green beans, trimmed, chopped
  • 1/4 cup vindaloo curry paste
  • 250g cherry tomatoes, halved
  • 425g can tuna in oil, flaked, oil reserved
  • 1/4 cup chopped fresh coriander leaves
  • Plain yoghurt, to serve
  • Lime wedges, to serve

Method

  • Step 1 Place rice and 3 cups cold water in a saucepan over high heat. Bring to the boil, stirring occasionally. Reduce heat to low. Simmer, covered, for 10 minutes. Add beans. Cook, covered, for 4 minutes or until beans and rice are tender.
  • Step 2 Add curry paste. Stir to combine. Add tomato, tuna and reserved oil. Cook, stirring, for 5 to 6 minutes or until tomato starts to soften. Add coriander. Stir to combine. Serve with yoghurt and lime wedges.
