Ingredients

  • 125g vermicelli noodles
  • 4 cups cooked turkey, shredded
  • 1 bunch mint, leaves picked
  • 1 bunch coriander, leaves picked
  • 4 spring onions, shredded
  • 1 long green chilli, chopped
  • 1 cup coconut milk
  • 1/4 cup fresh lime juice
  • 1 tablespoon Coles brown sugar

Method

  • Step 1 Place noodles in a large heatproof bowl and cover with boiling water. Soak according to packet directions. Drain and place in a large salad bowl. Add turkey, mint, coriander, onion and chilli.
  • Step 2 To make the Coconut Dressing: Combine coconut milk, lemon juice and brown sugar. Pour over salad and toss to combine.
