Ingredients

  • 4 x 150g turkey breast steaks
  • 2/3 cup fresh breadcrumbs
  • 1 tablespoon pistachio kernels, roughly chopped
  • 1 teaspoon finely grated lemon rind
  • 2 tablespoons chopped fresh flat-leaf parsley leaves
  • 1 tablespoon olive oil
  • Mashed potato, to serve
  • Steamed green beans, to serve

Spiced cherry sauce

  • 300g fresh cherries, pitted, halved
  • 2 tablespoons caster sugar
  • 2 cardamom pods, bruised
  • 1 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 tablespoons red wine vinegar
  • 2 teaspoons cornflour
  • 1/2 cup chicken stock

Method

  • Step 1 Preheat oven to 200C/180C fan-forced. Line a baking tray with baking paper.
  • Step 2 Using a meat mallet, pound turkey steaks between 2 pieces of plastic wrap until 5mm thick. Combine breadcrumbs, pistachios, rind and parsley in a bowl. Season with salt and pepper. Place 1/4 of breadcrumb mixture along 1 long side of 1 turkey steak. Roll to enclose filling. Secure with toothpicks. Repeat with remaining turkey steaks and breadcrumb mixture.
  • Step 3 Heat oil in a large frying pan on medium heat. Cook turkey for 4 to 5 minutes, turning, until golden all over.
  • Step 4 Transfer to prepared tray. Bake for 7 minutes or until cooked through. Cover loosely with foil. Stand for 5 minutes.
  • Step 5 Meanwhile, make Spiced cherry sauce: Place cherries, sugar and spices in a frying pan over medium-high heat. Cook, shaking pan occasionally, for 1 minute or until sugar has dissolved. Add vinegar. Cook for 1 minute. Combine cornflour and stock in a small jug. Add to cherry mixture. Cook, stirring, for 2 minutes or until mixture bubbles and thickens. Cook for a further 1 minute or until sauce darkens slightly.
  • Step 6 Remove and discard toothpicks from turkey. Thickly slice. Serve turkey with spiced cherry sauce, mashed potato and green beans.
