Ingredients

  • 500g Coles Australian Beef Slow Cooked Brisket American Style BBQ Sauce
  • 8 x 2cm-thick slices Coles Stone Baked Pane Di Casa Loaf
  • 40g butter, softened
  • 8 Coles Australian Vintage Cheddar Slices, halved
  • 8 long slices pickled cucumber
  • 20g baby spinach leaves

Method

  • Step 1 Empty the brisket and marinade from the packet into a large microwave-safe bowl. Cook, covered, in microwave on high for 10 mins or until brisket is heated through. Drain brisket from the marinade. Use two forks to shred the meat. Pour over the barbecue sauce from the packet and toss to combine.
  • Step 2 Spread the bread evenly with butter. Place half the bread, butter side down, on a clean work surface. Top with half the cheese, brisket mixture, pickles, remaining cheese and remaining bread, buttered-side up.
  • Step 3 Heat a large frying pan over medium-low heat. Place 2 sandwiches, buttered-side down, in pan. Cook for 2-3 mins or until bottom is golden brown. Carefully turn and cook for a further 2-3 mins or until cheese melts and bread is golden brown. Set aside and keep warm. Repeat with the remaining 2 sandwiches.
  • Step 4 Serve baby spinach leaves.
