Ingredients

  • 2 vanilla beans
  • 110g (1/2 cup) caster sugar
  • 50g butter, finely chopped
  • 4 Pink Lady apples, cored, each cut into 6 pieces
  • 1 teaspoon red wine vinegar
  • 375g packet Careme butter puff pastry (see note), or puff pastry block, thawed in the fridge
  • 20g (1/4 cup) fresh white breadcrumbs
  • 140g aged goat's cheese, (such as Kervella Affine), cut into 5mm-thick slices

Method

  • Step 1 Split vanilla beans lengthwise and scrape seeds into a bowl with sugar. Scatter sugar mixture and butter over the base of a large, heavy-based frying pan, place apples on top in a single layer and drizzle with vinegar. Cook over low heat until mixture bubbles, increase heat to medium and cook, covered, for 6–8 minutes or until apples are almost tender. Using a slotted spoon, remove apples and cool. Reserve cooking liquid in pan.
  • Step 2 Preheat oven to 250C. Roll out pastry (if necessary) on a lightly floured surface to a 27cm rough square 4mm-thick, then trim to a 26cm round. Place on a heavy-based oven tray, and, using a small knife, score a 1.5cm-wide border, then refrigerate for 15 minutes.
  • Step 3 Scatter breadcrumbs over pastry inside the border, then place the apples on top in concentric circles. Reduce oven temperature to 220C and bake for 20 minutes. Tuck goat's cheese among apples and bake for another 10 minutes or until pastry is golden and puffed.
  • Step 4 Place reserved liquid in pan over medium heat, cook until thick and syrupy, then spoon over tart. Serve warm or at room temperature.
