  • 2 egg whites
  • 1/4 cup maple syrup
  • 1 1/2 tablespoons caster sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups skinless hazelnuts
  • 1 1/2 cups blanched almonds

Method

  • Step 1 Preheat oven to 180C/160C fan-forced. Line a large baking tray with baking paper.
  • Step 2 Whisk egg whites in a large bowl until foamy. Stir in maple syrup, sugar and vanilla. Add nuts. Toss to coat. Spread mixture over prepared tray. Bake, stirring occasionally, for 12 to 15 minutes or until golden. Set aside to cool completely. Serve.
