Ingredients

  • 15g butter
  • 6 (1.2kg) pears, peeled, cored, cut into 3cm pieces
  • 1 teaspoon vanilla paste (see note)
  • 2 tablespoons caster sugar
  • 2 cups frozen mixed berries
  • Double cream or ice cream, to serve

Topping

  • 1/2 cup (75g) plain flour
  • 1/4 cup (80g) brown sugar
  • 75g butter, chopped
  • 1/2 cup rolled oats
  • 60g pecan nuts, chopped
  • 1/4 cup shredded coconut

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced.
  • Step 2 Melt butter in a large frying pan over medium heat. Add pear, vanilla and caster sugar. Mix well to combine. Cover, cook for 5-6 minutes or until pear is just tender. Remove from heat. Stir in berries.
  • Step 3 To make the topping, place flour and brown sugar in a bowl. Rub in butter until mixture resembles coarse breadcrumbs. Using hands, mix in oats, pecans and coconut until combined.
  • Step 4 Spoon pear mixture into 6, 1 cup-capacity, oven proof dishes. Sprinkle with topping. Bake for 15-20 minutes or until topping is golden. Serve topped with double cream or ice cream.
