Ingredients

  • 2 cups fresh breadcrumbs
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon Mexican chilli powder
  • 2 teaspoons finely grated lemon rind
  • 1/4 cup plain flour
  • 2 eggs
  • 4 (500g) veal schnitzels (uncrumbed)
  • 2 tablespoons olive oil
  • Steamed vegetables (1 head broccoli, cut into florets, 2 medium carrots, peeled, thickly sliced and 8 chat potatoes, halved), to serve
  • Lemon wedges, to serve

Method

  • Step 1 Combine breadcrumbs, chives, chilli powder and lemon rind on a large plate. Place flour on a separate plate. Whisk eggs in a shallow bowl.
  • Step 2 Coat 1 piece veal in flour, shaking off excess. Dip in egg. Coat in breadcrumb mixture. Place on a plate. Repeat with remaining veal, flour, egg and breadcrumb mixture.
  • Step 3 Heat half the oil in a large non-stick frying pan over medium-high heat. Cook 2 pieces veal for 4 to 5 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain. Repeat with remaining oil and veal. Serve with steamed vegetables and lemon wedges.
