Ingredients

  • 4 cups (1 litre) Massel beef style liquid stock
  • 700ml tomato passata
  • 1/2 teaspoon sugar
  • salt and cracked black pepper
  • 375g veal tortellini (or beef tortellini)
  • Fresh basil, shredded, to serve

Method

  • Step 1 Place the stock, tomato passata, sugar, salt and pepper in a large saucepan over medium heat and bring to a high simmer.
  • Step 2 Add the tortellini and cook following packet instructions or until al dente.
  • Step 3 To serve, spoon the tortellini among serving bowls and pour over the soup. Sprinkle with basil and serve immediately.
