Ingredients

  • 100g Swiss brown mushrooms
  • 2 green shallots, trimmed, chopped
  • 400g can lentils, drained, rinsed
  • 95g (1/2 cup) drained canned cannellini beans
  • 6 tablespoons Obela Classic Hommus Spread 375g
  • Plain flour, to dust
  • 2 medium wholemeal pita or Lebanese bread
  • 20g cos lettuce leaves
  • 1 carrot, peeled, coarsely grated
  • 70g grated cheddar or Swiss cheese

Method

  • Step 1 Preheat oven to 210°C/190°C fan forced. Line a baking tray with baking paper. Process the mushrooms and shallot in a food processor until chopped. Add the lentils, beans and 2 tablespoons Obela Smooth Classic Hommus. Season and process until just combined.
  • Step 2 Roll 2 level tablespoonfuls of mixture into balls (you should have 12 balls). Dust balls lightly in flour. Place on prepared tray. Spray well with oil and bake for 20-25 minutes or until golden.
  • Step 3 Spread remaining hommus down the centre of each piece of bread. Top with lettuce, carrot, cheese and the vegie balls. Season. Roll up to enclose and cut in half to serve.
