Ingredients

  • 1 tablespoon peanut oil
  • 1 brown onion, thinly sliced
  • 100g fresh shiitake mushrooms, finely chopped
  • 1cm piece fresh ginger, grated
  • 400g can brown lentils, drained, rinsed
  • 2 tablespoons hoisin sauce, plus extra to serve
  • 2 teaspoons soy sauce
  • 1/4 cup Shao hsing (Chinese cooking wine)
  • 16 baby gem lettuce leaves
  • 1 large carrot, cut into matchsticks
  • Fresh coriander leaves, to serve
  • Sliced red chilli, to serve

Method

  • Step 1 Heat oil in a large frying pan over medium-high heat. Add onion and mushroom. Cook, stirring, for 4 minutes or until just softened. Add ginger. Cook for 1 minute or until fragrant. Add lentils. Stir to combine. Add sauces and shao hsing. Cook, stirring, for 1 minute or until mixture is combined and heated through.
  • Step 2 Place lettuce leaves on a large serving platter. Fill with carrot and mushroom mixture. Top with coriander and chilli. Serve with extra hoisin.
