Ingredients

  • 4 garlic bulbs
  • 4 thyme sprigs
  • 1/3 cup (80ml) extra virgin olive oil, plus extra to serve
  • 250g soft fresh goat's cheese or ricotta
  • 1 loaf wood-fired bread, thickly sliced

Method

  • Step 1 Using a sharp knife, cut the top off each garlic bulb to expose tops of the cloves. Don't remove the papery skin.
  • Step 2 Cut out 4 large squares of foil and place a garlic bulb and a sprig of thyme on each. Drizzle each with 1 tablespoon oil, season with salt and pepper, then wrap tightly. Place in the fire and roast for 30 minutes. Alternatively, place on a baking tray and roast in an oven preheated to 180°C for 35 minutes.
  • Step 3 To serve, peel away papery garlic skin, squeeze out the soft cloves, then mash. Spread garlic onto bread slice, top with cheese, season with pepper and drizzle with olive oil. Serve immediately.
